The Kitchen Gyuto is my take on a traditional Japanese Gyuto knife with a dash of French influence. The idea behind this knife was to create a blade that can handle most of your cutting needs in the kitchen while being light and comfortable throughout your work.
The Kitchen Gyuto has an overall Cutting edge of 240mm (9") and a handle length of 130mm, from blade to spine is 47mm at the widest part and has a tapered spine of 3.3mm.
This particular Kitchen Gyuto features a Cu-Mai clad San-Mai blade with a Hitachi SLD core, complimented by hand sanded satin finish (etched). The handle consists of a dyed Tasmanian Blackwood, with black G10 and brass spacers.
