The 8” santoku is my take on a more western style Japanese santoku. The 8” santoku is kitchen workhorse that takes well to a variety of different used, however there is no argument that the santoku is in its prime when cutting, dicing, and slicing vegetables. I designed the 8” santoku with the aim of creating a blade aimed at excelling in processing vegetables while also maintaining high levels of performance across a variety of kitchen tasks.
This 8” Santoku is constructed using stainless damascus cladding and a Hitachi SLD core steel. The blade comes in at a length of approx 220mm, a width of 50mm, handle length of 115mm and a spine thickness of 2.5mm.
This particular 8" Santoku features a hand finished polished and etched blade, along with a dyed Tasmanian Blackwood handle with black G10 Bolster
